Gluten Free Banana Bread Recipe

banana bread gluten freeI enjoy cooking and baking and I figured I would share a quick recipe with you. It’s an old recipe from my Wife’s Grandmother and the only thing that has been changed is the omission of the flour. It can still be made with any flour, but for this purpose it’s a gluten free recipe.

Of course some of the ingredients can be tweaked like I always do, you don’t need to follow this recipe to a T.

I’ll give the original recipe as handed down and then the tweaked version.

Original:

  • 2/3 Cup Sugar
  • 1/3 Cup Shortening
  • 1/3 Cup Applesauce
  • 3 TBSP Soured Milk ( 2 TBSP Milk & 1 TBSP Vinegar)
  • 1 Cup Mashed Banana  (2-3 Smaller Ones Older The Better)
  • Mix the above ingredients before adding the dry ingredients.
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 Cups Flour

Gluten Free:

  • 1/3-1/2 Cup Brown Sugar
  • 1/3 Cup Oil
  • 1/3 Cup Applesauce or Apple Butter & omit some of the sugar
  • 3 TBSP Soured Milk ( 2 TBSP Milk & 1 TBSP Vinegar)
  • 1 Cup Mashed Banana  (2-3 Smaller Ones Older The Better)
  • Mix the aboveingredients before adding the dry ingredients.
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 Cups Pamela’s Baking & Pancake Mix or gluten free all-purpose baking flour
  • Optional: 1/2 Cup Chopped Walnuts sprinkled on top/mixed in.

Mix everything together and pour into a greased loaf plan let sit in for 10-15 Mins while oven is heating up to 350 Deg F, bake for 50-60 minutes.
